Ante is modelled after the Japanese concept of jazzu kissa – a jazz bar where the music is as important as the drinks. Owner Matt Young has brought along his collection of more than 2,500 vinyl records to set the scene. The atmosphere is dark and moody, taking you out of the bustle of King Street and into a slick pocket of Tokyo.
The focus is on sake, with more than 60 on the list – start with a tailored flight of three to discover what you like. Chef Jemma Whiteman (ex-Pinbone, Lankan Filling Station and Billy Kwong) has created a global menu with clear Japanese influences. Dishes like tagliatelle with fermented shitake mushrooms or beef brisket with turnips, prune and yuzu are designed to pair perfectly with sake.
