A boutique store in Bermagui, and every flavour has a tailored recipe for a sculptured taste. The area is rich with gelato resources; dairy pastures and fruit trees are abundant, the water is young and hard. Perfect! Just like Italy!
They are registered at the NSW Food Authority with a dairy license, which allows them to source local raw milk for production. This results in healthier, less processed ice cream with low fat and carbs. Their fruit sorbets only have raw fruit as their primary ingredient.
Traditional techniques are used to make all the gelati, concentrating on the key ingredient to allow it to exult. This makes their product different to another ice cream; in fact, the texture varies depending on flavour – this is the mark of true artisan gelato. Sorbets contain only the fruit for flavour and colour, making them free of fat, gluten, dairy and eggs.
Bermagui Gelati Clinic uses cold pressing techniques to ensure the fruit nutrients are preserved. Milk gelato – chocolate, coffee, nuts, vanilla, etc. – is similarly made using only pure ingredients with no flavourings or colourings. Passion for gastronomy does not allow for commercial compromise!
