Every inch of this cozy distillery — from the walls to the chandeliers — was built by hand by the owner–distillers, whose dedication shows in every detail. The name Variations was inspired by Aldous Huxley’s favourite gift from composer Igor Stravinsky — a piece of music titled Variations.
