Today, his grandson and now winemaker Peter Collett carries that legacy forward, sharing precious cellar-aged treasures and championing the fortified styles that shaped McLaren Vale’s winemaking identity.

In collaboration with Trilby’s Chocolates, we’ve custom-matchedfour Woodstock fortified wines with a flight of handcrafted, bean-to-bar artisan chocolates—creating an indulgent expression of South Australia at its finest. Founded by chocolate maker Max Collett, whose passionate approach to sourcing, roasting, and crafting cacao mirrors the precision of fine winemaking, Trilby’s brings a beautifully bespoke dimension to this experience.

AUD50 per person includes four fortified wines, their paired Trilby’s chocolates in a self-guided tasting, plus a bottle of your favourite Woodstock fortified to take home (Matriarch Muscat +AUD15).
