Maritime Tasmanian single malt whisky, made & matured just metres from the ocean in Bicheno, Tasmania.
Set atop the lichen-covered rocks, what was once an old oyster hatchery is now a world-class whisky distillery with hundreds of casks maturing, 5 salt-laden bond stores and a cooling system run entirely by the ocean.
Rich in history, their name is a nod to the former town name of Bicheno and honours Wauba Debar, a Tasmanian Aboriginal woman known for her bravery as ‘heroine of the sea’. A tale Waubs Harbour is proud to tell.
Founded by Tasmanian family, Tim & Bec Polmear in partnership with Tim’s brother Rob Polmear. The team come with a wealth of expertise with Rob formerly Head Distiller for Overeem Whisky & Head of Production for Lark Distillery.
Waubs Harbour’s official first release launched in April 2023 with the distillery officially opened by the Tasmanian Premier. Bottle number #01 of their Founder’s Reserve whisky auctioned for $4800, with all proceeds donated to the Great Southern Reef Foundation.
Many of their releases sell out quickly, with priority access given to their email list. When available, bottles can be purchased from their website, at whisky venues around Australia or at the distillery.

Fireside whisky tasting with maritime story in Bicheno
Gather around a crackling open fire in the winter-crisp air, perched above Bicheno’s lichen-covered shoreline. Warm your hands by the fire and your insides with maritime Tasmanian whisky aged in casks by the ocean – each dram carries a subtle briny character from the edge of the Tasman Sea. Hear stories of Bicheno’s sealing and whaling past, learn how the far east coast shapes this whisky’s maritime style. Saturday 4.15pm June–August only. $40 per person for 4 whiskies.
