Tucked beneath Pitt Street in Sydney’s CBD, Centro 86 is an underground margarita bar where agave takes centre stage. From the team behind Bar Bridge, Bar Herbs, Cantina OK!, Bar Planet, Tio’s Cerveceria and The Cliff Dive, it’s best known as the home of Sydney’s most delicious spicy margarita.
Step inside and you’ll find a cocktail menu that’s designed to feel familiar and fresh at the same time, with hand pressed lime juice, shaved to order ice, and thoughtful use of a modern Sydney pantry. Alongside the signatures, the menu features a rotating monthly margarita special spotlighting seasonal ingredients and unexpected flavour combinations.
More than 100 bottles of agave spirits line the shelves, sourced through trips to Mexico alongside rare finds from further afield. Drinks are accompanied by a freshly popped bag of Tajín-inspired seasoned popcorn: sweet, salty, spicy, and sour in equal measure.
