Port Lincoln
Welcome to the seafood capital of Australia, Port Lincoln! Your local guide will greet you at the airport on your arrival around midday, before you delve straight into following your tastebuds. To taste the gourmet delights of Port Lincoln is a must for any visitor! Meet Tony Ford, one of Port Lincoln and South Australia’s best chefs at his Boston Bay Winery for a late lunch of seafood and wine pairing. Cook your own fish whilst learning about the various wines grown here along with sampling some of Port Lincolns very best seafood. This winery is the world’s closest vineyard to the ocean, and the locals often joke that pruning needs to be done at low tide so the crayfish don’t bite you!
Eyre Peninsula
An early departure takes you to the stunning Coffin Bay, renowned for its sapphire waters, pristine wilderness, and world-famous oysters. Join local Indigenous guides—Nauo woman Jody Miller and a Wirangu tribe member—for a cultural immersion through bush-tucker foraging, traditional storytelling, and hands-on learning about bush medicine and cooking. This authentic experience offers a deep understanding of local Indigenous heritage, passed down through generations.
Enjoy a seafood lunch at 1802 Oyster Bar (or similar), overlooking the oyster leases that put Coffin Bay on the map. Then, board a cruise with a local oyster farmer to explore ‘The Brothers’ islands, home to seabirds, seals, dolphins, and even sub-fossil remains. Learn how oysters are sustainably farmed, shuck your own, and taste them fresh from the sea.
This evening, after a short stroll, dine at El Giorno’s with a seafood-focused tasting menu: Coffin Bay oysters, sashimi, devilled scallops, calamari, mussels, King George whiting, lamb steaks, and Spanish king prawns. A culinary celebration of land and sea, all locally sourced.
Ceduna
This morning, you will continue along the Eyre Peninsula to the last town before the Nullabor – Ceduna. This area is one of the most contrasting, isolated and dramatic regions on the Eyre Peninsula. The landscape is full of hidden secrets and foot-print free beaches where Southern Right Whales folic in the water. Heading west, the landscape flatters and the treeless Nullabor Plain begins.
Forrest
Today you will fly to the town of Forrest which is on the Perth to Sydney railway line on the Nullarbor. It has a permanent population of two. Your accommodation here is a former settlers cottage, which has been re-purposed as accommodation. On a moonless night, you can walk away from the accommodation to the end of the runway (to get away from the lights) and have “the everlasting glory of the stars” from horizon to horizon. Dingoes howling in the distance. Both magical and eerie.
Kalgoorlie
Continuing on, today you will fly to the biggest city in the Australian outback, Kalgoorlie. This town is a vibrant mix of gold rush history, grand colonial buildings and immense mining operations, surrounded by some of the most dazzling spring wildflowers and eerie gold-rush ghost towns. This afternoon, it is time for a real slice of gold rush life and Goldfields culture, check out the Kalgoorlie-Boulder WA Museum, the Royal Flying Doctor’s Visitor Centre and the art galleries featuring the works of Aboriginal and Goldfields artists.
Today, set off for a short drive to your outback destination. Start with an informative bushwalk where you learn how to recognise the tracks of local wildlife, gather bushtucker and learn Wongutha names and uses for local plants and animals. Visit culturally significant sites, hear ancient Dreaming stories, learn about traditional tools and hunting weapons and experience the world’s oldest living culture. Traditional bush damper and Billie tea are included.
Esperance
This morning, farewell the goldfields and fly to Esperance on the southern coast. En route, enjoy a scenic flight over Lake Hillier—a vivid pink lake on remote Middle Island, protected as an A-class Nature Reserve and best appreciated from the air.
This afternoon, explore one of WA’s few Ramsar-listed wetlands, home to 20,000 waterbirds, bandicoots, possums and frogs. Wander the Kepwari Trail, which loops around the serene Wheatfield, Windabout and Woody Lakes.
Then it’s off to Cape Le Grand National Park—one of WA’s most iconic and breathtaking coastal landscapes. Think dazzling white sand, impossibly blue waters, and kangaroos lounging on the shore at Lucky Bay. The afternoon is yours to relax and soak it all in.
Margaret River
Fly into the heart of the Margaret River wine region today, where you’ll settle into a private country house-style hotel renowned for its culinary flair. Spend the afternoon exploring the area’s gourmet and artisan delights—visit The Margaret River Chocolate Factory, Providore, Olio Bello and Vasse Virgin olive oil producers. A 3-course winery lunch with two glasses of wine sets the tone for a delectable day.
This evening, connect with local Noongar culture during a guided bushwalk to learn about traditional medicinal plants, followed by a didgeridoo performance deep inside the sacred Ngilgi Cave, where Dreaming stories come to life.
The next day offers a full sensory journey through Margaret River’s boutique and iconic wineries. Begin at Passel Estate with an exclusive wine and chocolate bonbon pairing, then explore Voyager Estate’s vineyards by Land Rover before a portfolio tasting. Finish with their 4-course Discovery menu. In the afternoon, either meet a local artisan winemaker or venture off to uncover the region’s hidden scenic gems.
